Pomegranate Ginger Crown Pork


  • 1-6 lb. crown pork roast
  • Salt and Pepper to taste

Preheat oven to 350 degrees. Place the roast, ribs up, in a shallow roasting pan (without the rack). Season with salt and pepper.

After roasting for 1 hour 20 minutes, begin basting the roast periodically with the glaze below. Continue roasting 20-30 minutes or until the internal temperature of the meat reaches 160 degrees F. Allow to rest for 15 minutes then serve on a classy serving platter like this one.

If desired, decorate the tray with romaine lettuce leaves and cherry tomatoes, and fill the middle of the roast with your favorite side dish.

Glaze Recipe

  • 1 cup orange marmalade
  • 1/2 cup pomegranate juice
  • 2 teaspoons grated ginger
  • 2 T. lime juice
  • 2 T. soy sauce

In a small sauce pan, combine all ingredients. Gently simmer until well combined.
