Mashed Sweet Potatoes Side Dish

  • 5 sweet potatoes, peeled and cut into chunks
  • 2 tablespoons butter
  • 1/2 cup cream
  • 1 tsp salt

Every Thanksgiving, my mom used to make sweet potatoes and that was the only time of year we ate them. This recipe is so easy that I make them for my family throughout the year. They work well with almost any entree.

Simmer potatoes until fork tender, about 40 minutes. Drain potatoes.

Add butter, cream and salt to the potatoes, then using a masher or an electric mixer, blend well. Serves 4.

This simple recipe goes especially well with Cabernet Flank Steak and Roasted Asparagus.
