| Taco Soup
1 lb. ground beef1 cup onions, chopped1 cup green pepper, chopped1 cup corn1 package taco seasoning1-1/2 cups chunky salsa or picante sauce1 large bottle (quart) V-8 or tomato juice Toppings
Shredded lettuceRed bell pepper, choppedGreen onion, choppedSour creamFritos, crushedCheddar cheeseBlack olives, slicedJalapeno peppers, slicedHot sauce
 In a Dutch oven over medium heat, cook ground beef, onions and green pepper until beef is no longer pink (6-10 minutes). Drain fat.   Stir in seasoning package and continue cooking 1 minute. Stir in juice, corn and salsa and continue cooking until heated through. Add water if you like a looser consistency. Pour soup into a tureen like this one from Mikasa (ladle comes with it). When ready to serve, ladle into bowls and have a nice variety of toppings available (see list above for ideas) so that guests can create their own special bowl of Taco Soup. This recipe can easily be doubled and works great for parties. Put it in a Crock Pot to keep it warm. Serves 8.
