Bacon Encrusted Beef Tenderloin

My friend Georgia makes this recipe for New Years Eve. The beef comes out perfectly juicy every time and the flavor is over the top.

  • Beef Tenderloin, room temperature (about 5 lbs.)
  • 1 pound bacon--pureed to cover beef
  • 1 clove garlic
  • 6 tablespoons butter
  • 3 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Mince bacon with garlic, butter, mustard, salt and pepper. Mix well to make a paste. Pat over beef. Broil 5 minutes then bake at 350 degrees for 20 minutes.

Let the tenderloin rest for 15 minutes before carving into 1/2 inch slices. Serves 10-12.
