Bacon Encrusted Beef Tenderloin
Perfect for the Holidays
My friend Georgia makes this recipe for New Years Eve. The beef comes out perfectly juicy every time and the flavor is over the top.
- Beef Tenderloin, room temperature (about 5 lbs.)
- 1 pound bacon--pureed to cover beef
- 1 clove garlic
- 6 tablespoons butter
- 3 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Mince bacon with garlic, butter, mustard, salt and pepper. Mix well to make a paste. Pat over beef. Broil 5 minutes then bake at 350 degrees for 20 minutes.
Let the tenderloin rest for 15 minutes before carving into 1/2 inch slices.
Use an electric knife to make carving a breeze. Arrange the tenderloin on a White Platter and place some vegetables and leafy, green lettuce leaves around the edge to really show off this dish. The handles on the platter are especially helpful when carrying to the table.
Serves 10-12.
