Banana Bread With Mixins
"This Banana Bread With Mixins recipe has been in our family for years. You make the basic recipe and then you add in whatever mixins your family likes. We like a combination of bananas, chocolate and butterscotch chips served with honey butter. "
Wet Ingredients
- 6 eggs
- 1-1/2 cups sugar
- 1-1/2 cups oil (I use Canola)
- 4 teaspoons vanilla
- 3 cups ripe bananas (about 6 large)
Dry Ingredients
- 4 cups flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
Mix In Ideas
- 1 cup (or to taste) chopped dates, chocolate chips, Heath pieces, butterscotch chips, nuts, coconut, pineapple or dried cranberries
Preheat the oven to 350 degrees. Grease two 9x5 inch loaf pans.
In a large bowl, mix together the eggs, sugar, oil, vanilla and bananas. Combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Reserve 2 tablespoons of the dry mixture. Gradually add remaining dry mixture to wet mixture until well combined.
To keep the mixins from sinking to the bottom of the loaves when baking, toss them in the reserved flour mixture before gently stirring into the batter. Try using 2 or 3 different mixins together, like dates and mini chocolate chips.
Divide the batter evenly between the 2 prepared pans. Bake in preheated oven for 60 to 70 minutes. The top of the loaves should spring back when lightly pressed.
This bread is so good served with honey butter. To make it, take 1/2 stick of softened butter and about 2 tablespoons of honey and blend together.
