Harvest Casserole
This recipe for harvest casserole is perfect for potluck and other casual dinner parties. Serve it with a crisp green salad and some warm bread with sweet cream butter.
Ingredients
- 2 cups lentils, rinsed and cooked
- 2 cups fresh or frozen broccoli, chopped
- 1-1/2 cups cooked rice (I use wild rice blend)
- 1-1/4 cups (6 oz.) shredded Cheddar cheese
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon dried rosemary
- 4 eggs
- 1 cup milk
Preheat oven to 350 degrees.
Mix lentils, broccoli, rice, cheese, soy sauce, salt, thyme, marjoram and rosemary in large bowl. Place mixture in a greased 9-inch casserole.
Stir together eggs and milk in medium bowl. Pour egg mixture over lentil mixture. Bake 45 minutes or until lightly browned.
Top with additional cheese, if desired.
