Pimento Cheese
- 1 (3-ounce) package cream cheese, softened
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 2 to 3 tablespoons pimentos, finely chopped
- 1 teaspoon grated onion
- Cracked black pepper to taste
Using an electric mixer, beat together all ingredients until well combined.
This mixture is excellent served with crackers and raw vegetables, especially red, yellow and green peppers. It can also be used as a spread for sandwiches.
