Pimento Cheese
This Pimento Cheese recipe is excellent served with crackers and raw vegetables, especially carrots, celery and peppers. It can also be used as a spread for finger sandwiches.
- 1 (3-ounce) package cream cheese, softened
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 2 to 3 tablespoons pimentos, finely chopped
- 1 teaspoon grated onion
- Cracked black pepper to taste
Using an electric mixer, beat together all ingredients until well combined.
