Taco Dip for a Crowd
- 2-8oz. packages cream cheese, softened
- 1-1/2 packages of taco seasoning
- 1-16 oz. container sour cream
- 1 large jar of salsa (I use a black bean and corn variety)
- 8-12 oz. of shredded cheese (a Mexican blend works well)
- Bag of shredded lettuce
- 1 red pepper, chopped
- 1-4 oz. can of black olives, sliced
- 2 green onions, finely chopped
- Tostidos or Fritos Scoops
When we have large parties that include our adult friends, our kids and their friends, this is the appetizer that everybody asks for. Not only is "Taco Dip for a Crowd" loved by guests of all ages, but it is basically a dump-all-the-ingredients-on-the-platter kind of recipe so it's very easy to prepare. Great for big parties.
Using an electric mixer, blend together cream cheese and taco seasoning until smooth. Spread on a large platter like this one, beautifully crafted by artist Alfonso Luis. This style is representative of classic Talavera pottery crafted in Puebla, Mexico. 
Spread the sour cream on top of the cream cheese layer then pour the jar of salsa over all. Sprinkle the shredded cheese then the lettuce on top.
For the finishing touch, put on your favorite toppings. Ours include red pepper, black olives and green onion. Serve with your favorite Scoop-type chips.
