Vidalia Onion Dip

  • 1 cup mayonnaise
  • 1 cup Vidalia (sweet) onion, finely chopped
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon garlic salt
  • 1 cup shredded Swiss cheese
  • Assorted crackers or veggies

Our Aunt Diane first made this Vidalia Onion Dip several years ago and since then it has become a family favorite. It is even more special to us now that she has passed away. We love it not only because it came from her, but it can easily be doubled or tripled so it is perfect for parties.

Don't be afraid that the primary ingredient is onions. They are SWEET onions and when baked with the rest of the ingredients, Vidalias create a mild, flavorful concoction that everybody loves.

Preheat oven to 325 degrees.

In a bowl, combine the first four ingredients. Stir in cheese and spoon mixture into shallow baking dish.

Bake for 40 minutes. Serve warm with crackers or veggies.
