Hummer Cocktail

When we were in college, my boyfriend (now husband) and I used to go to a little club on Friday afternoons and order a Hummer cocktail. They are a dessert as much as they are a mixed drink.

• 4 ounces coffee liquor, like Kahlua
• 4 ounces light rum
• 8 scoops vanilla ice cream

Put ingredients into a blender and blend on low speed until well combined. Pour into highball glasses and serve. Mixture will be thick like a milkshake. Makes 4 drinks.

Optional: Swap out the vanilla ice cream for chocolate ice cream and you get a chocolate version of this special drink. Can you imagine it? Yum!

Kahlua Strawberry Cream Daiquiri

• 1-1/2 ounce Kahlua coffee liquor
• 1/2 ounce rum
• 1 tablespoon lime juice
• 4 medium strawberries, hulled and sliced
• 1 ounce cream
• 1/2 cup crushed ice

Combine all ingredients in a chilled blender. Mix until smooth, pour and garnish with mint sprig and strawberry. Makes two Kahlua Strawberry Cream Daiquiri cocktails.

Kahlua Banana Cream Fizz

• 2 ounces Kahlua coffee liquor
• 1 ounce rum
• 1 sliced banana
• 1-1/2 tablespoons lime juice
• 2 ounces cream
• 1 cup crushed ice
• 1 ounce chilled club soda

Combine all ingredients except soda in a chilled blender. Mix until smooth and pour into glasses. Add club soda and garnish with bananas and cherries. Makes two Kahlua Banana Cream Fizz drinks.
