Southern Apple Slaw


  • 1 bag of coleslaw mix (I use Dole angel hair variety)
  • 1 Granny Smith green apple, chopped
  • 2 tablespoons lemon juice
  • 2 green onions, green part only
  • 1 pkg chicken flavored Ramen noodles
  • 1/3 cup slivered almonds
  • 1/2 cup vegetable or canola oil
  • 2 tablespoons soy sauce
  • 1 seasoning packet from the Ramen noodles
  • 2-3 tablespoons cider vinegar to taste

Seed and chop apple and bathe in a mixture of lemon juice and a cup of water to prevent browning. Drain apples. Toast the almonds in a small saute pan over medium heat for 2 minutes.

Break up Ramen noodles into bite-size pieces, reserving seasoning packet for dressing. In a large mixing bowl, combine Ramen noodles, coleslaw mix, apples, almonds and green onions.

Whisk together oil, soy sauce, seasoning packet and vinegar until combined. Pour over coleslaw mixture and refrigerate for 4 hours before serving. Makes 6-8 servings.
