This recipe for Southern Apple Slaw is easy to put together and definitely a crowd pleaser. The crunchy apple, almonds and Ramen noodles adds a nice texture to this coleslaw recipe. Serve it to guests at home or take to a potluck dinner.
Seed and chop apple and bathe in a mixture of lemon juice and a cup of water to prevent browning. Drain apples. Toast the almonds in a small saute pan over medium heat for 2 minutes.
Break up Ramen noodles into bite-size pieces, reserving seasoning packet for dressing. In a large mixing bowl, combine Ramen noodles, coleslaw mix, apples, almonds and green onions.
Whisk together oil, soy sauce, seasoning packet and vinegar until combined. This dressing is excellent on all kinds of salads. Try it on a salad made of Romaine lettuce, cucumber, carrot, cilantro and rice noodles. Yum!
My Grandma and her sisters used to make a mayonnaise-base dressing for their coleslaw recipes and I think it would go well with this salad too. All you do is combine mayo (not Miracle Whip) with some cider vinegar, sugar, salt and pepper. I don't know the exact proportions but I just combine until I like the taste.
Pour dressing over coleslaw mixture and refrigerate for 4 hours before serving. Makes 6-8 servings.
