Sweet Mango Salsa

Use this salsa as a dip or on tacos (chicken, pork or fish especially)

1 jar mango, diced
2 avocados, diced
1/2 red onion, diced
1 red pepper, diced
2 jalapenos (more or less) seeded, veined and minced

Dice & mix in non-metallic bowl.

2-3 limes, microwaved for 15 seconds
Salt to taste (start with 2 tsp)

Slice the limes in half and squeeze the juice and pulp over the mango mixture. Add the salt and toss. Refrigerate for at least one hour before serving.

Cilantro, one of the best herbs!

Oh yah, can't forget the cilantro. I've heard it said that cilantro is one of those herbs that you either love or you hate.

I happened to be one of those people who love it and use it regularly, even in salads.

My daughter despises the stuff and even if I try to hide it in a recipe, after she tastes it she'll say, "is there cilantro in this? I thought so!"
In other words, this recipes stinks, Mom!

I forgot...sheesh! I guess it's not absolutely needed, but I always snip a couple tablespoons of cilantro and add it to the salsa.

Ultimate Fish Tacos

Debi: Love, love, love this idea. I have 2 vegetarian kids that I'm having trouble cooking for. It's always a challenge to come up with meals that they can quickly grab when they are on the run.

With this recipe, you could keep the cooked fish sticks and the fixings in the fridge and they could quickly put a taco together, just like the non-vegetarians put a ham sandwich together.

For an easy supper, bake frozen fish sticks, put them in warm white corn tortillas and top with Mango Salsa, shredded cabbage or lettuce and some queso fresco. Serve with red rice.
