Cheesy Party Potatoes

My mom used to make these party potatoes for family gatherings. They go especially well with Kahlua Baked Ham and Warm Cinnamon Applesauce. When I made the meal below, I served them with Sweet Corn Stuffed Peppers and Zucchini Tomato Casserole.

Ingredients
  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1 stick melted margarine (butter separates)
  • 1 cup finely chopped onion
  • 16 oz. sour cream
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 8 oz. shredded Cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon parsley
  • Potato chips, crushed

Preheat oven to 375 degrees. Mix all ingredients together except parsley and potato chips and pour into a 9 x 13-inch greased pan.

Top with parsley and potato chips and bake for 1 hour. This Cheesy Party Potato recipe is fantastic. Whether serving it to your family or for a special gathering like Mothers Day, you might want to double, or even triple, this recipe. It is usually the first thing to go!

Great Holiday Side Dish Recipe!

I made these cheesy potatoes for some out-of-town guests the night before Thanksgiving and served them with ham, our favorite pineapple casserole recipe and a salad. Boy do those things go well together!

Cheesy Party Potatoes

I made a couple changes this time. First, I used cream of mushroom soup so my vegetarian daughter could eat it. Next I used flavored potato chips from Target. I think they were Baked Potato flavor with green onion, bacon and cheese flavorings. Instead of using regular potato chips, these were so tasty as a topping!

With a sprinkle of parsley for color, these potatoes were tasty and looked great on the plates. We use parsley or paprika on alot of dishes not for flavor but for color. I always tell my daughter, "you eat with your eyes before your mouth so make your dishes LOOK good too."
